Recipe of the Day             
Cheese Fondue
Category: Cheese, Cheese & Eggs, Fondue, Swiss, Western European
 
Yield: 8 persons
1 tsp Garlic, chopped
1 cup White wine, dry
1 tsp Lemon juice
1/2 lbs Gruyere cheese
1/2 lbs Emmental cheese
1 tsp Cornstarch
2 tbsp Kirsch
Procedures
  1. Finely grate the Gruyere and Emmental cheeses.
  2. In a flame proof dish, put in the chopped garlic, lemon juice and dry white wine. Heat until liquid starts to simmer.
  3. Add the grated Gruyere and Emmental cheeses.
  4. Mix the starch with the kirsch, and add to the cheese fondue. Heat until the cheese mix has started to thicken - around 2 minutes.
  5. Stir in a dash of ground white pepper to season.
  6. Serve with bread and potato cubes.
